Country of Origin: India Common use: this flavorful yet strongly pungent seed (or fruit pod) is one of the popular spices commonly feature in Indian, African, and Middle-Eastern cuisine. It is thought to have originated in Persia regions from where it spread to the Indian subcontinent. Its flavor closely resembles that of thyme due to the predominant essential oil thymol. In order to keep fragrance and flavor intact, the seeds are usually ground just before preparing dishes and added to the cooking recipes at the final stages. Ajwain seed oil has the highest percentage of thymol which has shown to have local anaesthetic, anti-bacterial and antifungal properties. In ayurvedic practice, ajwain seeds are sometimes recommended as a carminative in treating flatulence and indigestion.
