Hulless barley does, in fact, have a hull, but it is so thin that it easily falls away when the grain is harvested, so it leaves the bran and the germ intact, making it a whole grain food. Barley is an excellent source of dietary fiber, with more than 30% of your recommended daily value, and is a good source of protein and complex carbohydrates. It is excellent warm or cold as an addition to soups, salads and side dishes, in place of rice in risotto, and can be substituted in any recipe for pearl barley, which is not a whole grain.- Farmer-owned, fair trade, organic = fairDeal™

Cooking Instructions
Bring 1 cup barley and 3 1/2 cups water or broth to a boil. Cover, reduce heat, and simmer for 40 minutes for “al dente” barley that would hold up well in soups and salads, or continue simmering for another 40 to 45 minutes if you prefer softer barley. If desired, add aromatics such as onion, garlic, bay leaf, bacon fat or bacon, ham or bones, mushrooms, etc., to cook with the barley to add depth of flavor. Remove aromatics and stir in final seasonings before serving.Storage
Store in an airtight container in a dark, cool, dry place for up to 24 months. Cooked barley can be stored in the refrigerator for up to a week.Available in
