Red beans are an excellent source of dietary fiber, a good source of protein and iron and are low in fat. Cooking Instructions
Add 1 cup beans to a pot and cover with cold water. Soak for 6-8 hours. (Quick soak method: Bring to a boil, cover, remove from heat, let sit for 1 hour.) Drain and cover with fresh water or stock by 1 inch. If desired, add aromatics such as bacon, ham/bones, garlic, onion, bay leaf, spices, etc. Bring to a boil, reduce heat, and simmer to desired doneness, 1-2 hours. Add water as needed during cooking to keep beans covered. Add salt or acidic ingredients 10-15 minutes before desired doneness. Makes about 2 to 2 1/2 cups.Storage
Store in an airtight container in a dark, cool, dry place for up to 24 months. Cooked beans can be stored for 1 week in the refrigerator or frozen for up to 6 months.Available in
